(Farmers like to name the fruits of red coffee with Red Agate, compared to the precious and famous Yemeni agate to express their appreciation for these fruits)

Harazi coffee is grown in the heights of the mountainous Haraaz region which enjoys moderate temperature and low humidity. Such climate is one of the most important factors for its quality as well as the quality of the water used to irrigate the coffee trees. It depends on rainwater, dams and springs from the peaks of the mountainous highlands which are with a balanced mineral texture and fresh taste, giving the fruits of the coffee a unique sweet taste.

The fruits of the coffee are harvested in stages. No fruits are harvested until they mature and turn into a dark red color saturated by the rich fruity flavours that has been left in soil by older plantations throughout the years.

Traditional drying is practiced under the sunlight without washing, being as a distinctive feature of the Harazi coffee and when is the time that the coffee peels that gives an additional value of the sharp flavour of the fruit.

The fruits of the coffee are placed on mats made of palm trees on a raised beds , and carefully swerved by hand so that the surface of the shell receives equal amount of sunlight, until the internal moisture reaches 13%.

Haraaz Red fresh cherries purchased directly from producers who have picked and sorted perfectly ripe fruit and delivered it immediately after harvest. Are fully traceable through local producer ID cards.

  • WASHED PROCESS

Washed coffees (aka wet process) use water to remove the coffee seed from the cherry. This has the least amount of contact with the fruit and has a clean and often creamy taste. Washed coffees are commonly known to carry more flavours from the origin, terroir and variety rather than the processing flavours.

  • NATURAL PROCESS

Natural coffees were popularised by producing countries that did not have as much access to water, this processing technique has since been adopted all over the world and tends to carry through a rich fruity flavour from the extended contact with the coffee cherries,

  • FERMENTED

There are many coffees that fall into this third category of coffee processing, the most popular being Anaerobic fermentation and Carbonic Fermentation (CM).
