The Graycano Dripper is a German coffee gear manufacturer displaying an innovative approach to how we brew coffee. In recent years the Graycano Dripper has received a lot of attention, featuring in Brewers cup competitions.
Why the Graycano Dripper Brews so well
One of the core variables with brewing pour over coffee is temperature, mainly brew water temperature. By the time your water pours from your gooseneck kettle and actually hits the coffee grounds it is already a couple of degrees cooler and if you haven't pre heated your coffee brewer then depending on the materials used your dripper will suck out even more heat from your brew bed.
This is one of the biggest difference with brewing on different coffee drippers and the Graycano dripper has a unique approach to how it goes about maintaining it's hot temperature within the brewer.
Underneath the Graycano dripper you will find large hollow chambers that capture the hot air from your brewed coffee, this turns your dripper into a heat sink that maintains your coffee drippers hot temperature and in turn helps you to brew coffee at a more heat-stable temperature.
How To Brew Coffee On The Graycano Dripper
The Graycano Drippers main features include it's full metal construction, Large exit hole for fast flows, V-shaped ribs, Large chambers for heat retention. As well as this, the graycano dripper is coated in a durable coating that makes it completly scratch resistant, easy to clean and interacts well with paper coffee filters.
There are 2 ways to brew with the Graycano dripper, the first can be done by using a regular cone filter and the second method utilises a wave filter and the Graycano Coin accessory. The Graycano Coin is a small piece of silicone that has been moulded to fit the Graycano Dripper seamlessly and transform your coffee dripper into a flat bottom coffee filter.

Graycano Dripper Recipe - Cone Brewing
You Will Need:
- Graycano Dripper
- Graycano Filter Paper
- Coffee Brewing Scales
- 15g Filter Roasted Coffee Beans
- 250ml Water at 95ºc
Recipe:
- Start by adding your Graycano Filter into your Graycano Dripper, pre wet with some hot water to set the filter into place and remove any papery taste.
- Add 15 grams of filter roasted coffee beans ground at around 25 clicks on Comandante C40.
- Slowly pour your water covering the entire bed of coffee grounds, aim for 50g on this first pour (This first pour is also known as your 'Bloom').
- Allow your coffee to draw down into your cups / sever and proceed pouring an additional 50g. Try your best to maintain the same speed and match the pace as your previous pours.
- Repeat step four until you've reached 5 equal pours and a total brew weight of 250g of water.
Graycano Dripper Recipe - Wave
You Will Need:
- Graycano Dripper
- Origami Wave Filter Small
- Graycano Coin
- Coffee Brewing Scales
- 15g Filter Roasted Coffee Beans
- 250ml Water at 98ºc
Recipe:
- Start by adding your Graycano Coin in to your Graycano Dripper, followed by the Origami Wave Filter. Pre wet with some hot water to set the filter into place and remove any papery taste.
- Add 15 grams of filter roasted coffee beans ground at around 30 clicks on Comandante C40.
- Slowly pour your water covering the entire bed of coffee grounds, aim for 50g on this first pour (This first pour is also known as your 'Bloom').
- Allow your coffee to draw down into your cups / sever and proceed pouring an additional 100g. Try your best to maintain the same speed and match the pace as your previous pours.
- Repeat step four until you've reached 3 equal pours and a total brew weight of 250g of water.
The Results:
Brewing on the Graycano with a five stage pour allows you to grind finer and extract higher, we found this style of brewing to be best for washed coffees to add body and texture. This is an easy recipe to replicate and has been our go to method ever since using the Graycano Dripper.
When brewing the Graycano with the Coin Adaptor you are able to grind much coarser and experience a more even, cleaner tasting cup of coffee. The addition of the Coin does slow down your brew time and we highly recommend using a fast flowing filter to avoid too long of a brew time.
