The cherries are passed through tanks of water and the fruits that sink to the bottom are deemed perfect and therefore chosen to continue the process.
Without removing any part of the fruit, the cherries are immediately taken to green houses where the drying process begins.
Cherries are turned and raked in order to eliminate the chance of rotting and excessive fermentation.
They are then dried for 15 days in green houses with controlled temperature and finished with mechanical dryer.
The coffee is fruity, has great body and notes of peach, apricot, blueberry and dark chocolate.
ABOUT THE PRODUCER:
Villamaria is a drying station that represents the harvests of 30 coffee producing families in the surrounding area of Villarazo.
Climate change has resulted in longer rainy seasons, making farmer owned coffee drying facilities more challenging. With support from Raw Material, coffee producers in the area were able to come together and build a dedicated drying station to overcome this problem.
The Villamaría drying station sits at a lower altitude than the surrounding coffee farms meaning hotter temperatures for fast and efficient drying, well suited to the processing of honey and natural coffees. Villamaria drying station also means farmers can improve the quality of their coffee, with the use of dehydrator systems, controlling humidity and temperature ultimately producing a product of higher value for themselves and their customers (you!).
