The coffee cherries were anaerobically fermented for 48 hours, pulped and placed in Grainpro bags for a further 18 hours of fermentation. Finally, the coffee was sun-dried on raised beds until 10.5% moisture content was reached.
This microlot is 100% Pink Bourbon. This varietal is currently undergoing research in order to determine its origin. It is thought that this variety could have arisen due to a natural mutation in the DNA of the plant that took place at 2100m above sea level in San Adolfo, Huila, Colombia.
It’s a delicate and fine coffee with floral notes, red apple and sweet chocolate.
ABOUT THE PRODUCER:
Doña Melva Ligia Guzman comes from a family of coffee growers. She told me how her father has been a coffee farmer for many years, and she inherited the lot from him, where she works with her husband. Here, they grow this Pink Bourbon variety and other beautiful coffees.
Melva's coffee was selected in a group of the best 40 coffees in Huila, Colombia in the 2021 Cup of Excellence contest. This is a contest that seeks to discover the best coffees in this very fertile and popular coffee growing area. A great accomplishment! We are excited to have her coffee to offer you.
