This coffee comes from El Silencio farm in Buenavista Quindío (the heart of Colombia), located in the central mountain range of Colombia. This was a special batch from El Silencio as it was grown at the highest altitude on the farm and is the Colombia Amarillo or Yellow Colombia variety. The altitude it's grown and this particular variety means this coffee has a unique and differentiated profile.
The pickers selected the best quality coffee cherries by immersing them in water twice and removing the less dense beans, which are lower in quality. The coffee cherries were then kept intact with the skin on and fermented without oxygen (called carbonic maceration) for 84 hours. Once the fermentation is complete, the beans are dried in African beds for 18 days until the moisture content is between 10-12%. To achieve uniform drying, this type of coffee must be stirred at least once every hour, and the temperature must not rise above 40 degrees celsius. If temperatures increase past this point, the coffee must be covered with black canvas to avoid accelerated drying.
ABOUT THE PRODUCER:
Meet Sara, a fifth generation coffee farmer who owns her coffee farm, el Silencio, along with her husband, in Buenavista Quindido, Colombia.
Sarah leads the speciality coffee processing at el Silencio where she seeks to grow coffee traditionally, but with a twist.
While studying business at University, Sarah was working with her family’s roasted coffee brand. This led her to want to learn more about roasting and flavour profiles, so she did courses in roasting, fermentation and cupping. Here she began to appreciate that coffee is not just a fruit that is collected, dried and then drunk, but that there is an intricate science in the way coffee is processed that brings out unique flavours. Understanding that there is so much science behind coffee got her hooked and she fell in love with coffee growing and processing.
On her farm, they focus on sustainable coffee farming. This means adapting agricultural practices by protecting the soils using shade and using pruning methodologies so they don’t need to use herbicides and pesticides on the crops. Because of this, they can use bees to pollinate their crops, they have their own beehives on their farm to do this.
Her love of trying new methods and pushing the boundaries in specialty coffee has resulted in the creation of incredible new flavour profiles.
