At an altitude of 1,200 - 1,500 MASL in Chiquimula - Guatemala, Jesus and Ana had a small farm just 3.5 hectares in size. Together with part of his family they picked the cherries and started the process with a traditional fermentation for 36 hours. After this fermentation, they are sun-dried, a process that takes around 28 days, then the coffee is at the perfect point.
ABOUT THE PRODUCER:
Prior to working with coffee, Jesús Ruiz used to cultivate corn and beans. He has now been harvesting coffee for more than 25 years, and in 2018 he began to focus on speciality coffee.
When the people of his town began to plant coffee, Jesus was unable to do so at first, as he did not have the financial resources to maintain a new crop. Things changed in 1995 when together with his wife Ana, the couple were able to start planting coffee. The rest is history.
